Immediately when i took this out of the package, I was impressed with the quality. The stainless steel is sturdy, the handle is well-designed. I did use this to lift a layer onto the other, and it worked so well! The width of the spatula allows one to take a COOLED layer and with ease, place it in one swift movement to where it is supposed to go. I am so glad I have this in my 'gadgetry' collection.

The stick handle goes thru the jar top from the bottom so there is no seal and air ges in and makes the honey one big hard glob. I do not recommend buying this jar, stick to the honey bear bottle!!

(More customer reviews)I have had a plastice one with the built in strainer for years...and must admit I hated it, but didn't know why...IT was to smooth and slippery to really grab the flesh. Especially for the produce we get in Alaska, you really have to work for your juice, be from limes, lemons or any other citrus. Things are just not quite as fresh as they are in the states. This reamer rips right through these tough limes and lemons with hardly any effort. WHAT A RELIEF this tool is! I even did my own product test between the old and new with the same batch of limes...I was able to get nearly twice as much juice in less than half the time. If you like to use fresh citrus in your cooking and bartending, but don't want the commitment of a "juicer"...this is a wonderful, easy to store tool.

(More customer reviews)The previous poster is wrong. I am a pastry chef. Creme Brulee is best when it is 1 inch thick or less. That gives you a better ratio of crunchy top to silky cream.
You do have to be careful not to drown your brulees getting them in and out of the water bath with these dishes, and I have had some trouble with chipping, but they work perfectly well for creme brulee.

Matfer 215001 Mandoline Vegetable Slicer Review

(More customer reviews)My first mandoline was the Bron which is visually the most serious/macho/cool of the bunch, but its shortcomings were unacceptable - the slicing blade is one-piece stainless, and can't hold a sharp edge; the julienne blades are not sharp and can't be sharpened; and the safety carriage is designed to not go past the cutting edge. I sold it.
I now have a Matfer (the all-stainless model) and it has a 2-piece slicing blade: the cutting edge is high-carbon steel (which can be sharpened and hold its edge) welded to a stainless part. The julienne blades are very sharp (altho can't be resharpened). The safety-gadget thing works well, but can't be used for waffle cuts. I use the Matfer only for waffle cuts and if I have large quantities of slicing. If you want french fry size potatoes or are slicing celeriac, you're better off with a sharp knife. The disadvantage of this machine is that you can't adjust the slicing blade's uniformity of thickness - my slices are thicker on one side (the Bron had more adjustment leeway).
The machine I use the most is the Benriner - the slicing blade is very sharp and is sharpenable. The (unsharpenable) julienne blades are extremely sharp. It can't do waffle cuts and is not good for massive quantities of large cuts. It's best for finer julienne and thin slicing such as potatoes, cucumber or daikon.
Don't even consider using these machines without the safety gadget.
Unless I have a large quantity of slicing to do, I'd opt for a sharp knife, because cleanup time counts too.

Note: I originally wrote the above review in Nov. 2001, based on the then-current Matfer model 44595. Judging from the photo of the current model 215000, it appears that the slicing blade is now one-piece stainless steel instead of carbon welded to stainless. "... you can sharpen the knives and correct the play of the blades for more precise cuts" refers to the slicing/waffle blade, not the julienne. The julienne blades are not sharpenable.

(More customer reviews)I saw one of these on the Food Channel show 'Good Eats' and knew I had to have one (I love chicken/country fried steak and swiss steak!). I was not mistaken.
It's a solidly made, serious unit. Its sharp so be careful but it works like a champ. If you've been using those store bought cube steaks ... don't... buy one of these and do your own. You'll love the difference.
BTW, don't even consider the 16 blade type... worthless...

(More customer reviews)Since I live in dungeness crab country I've been searching for the best crab shell cracker. This tool looked good but in practice hasn't really worked out. The thing will break open the larger leg pieces but it mashed the meat inside and it sprayed crab juice all over. While I expect some of this, it was worse than the regular nut crackers I usually use.
Look instead for the Progressive International, the 7-inch seafood scissors. These are working out way better. You only need one pair of them to share around the table per 3 people.

(More customer reviews)I love this bench scraper. It's large -- 5 x 6 inches, including the handle -- so some people might find it awkward. But I like that you can scoop up everything in one shot. The handle is comfortable, but what I like most is that the sides have an edge sloping down from the handle, so chopped food doesn't fall off when you scrape it up off your cutting board. The shipping charge was outrageous -- as much as the item itself -- so I tried to find it locally (Kohl's carries Rachel Ray items) but couldn't. I got it for a Christmas present so I try not to think about the shipping rip-off.

At first I was a little skeptical about the manufacture's claim to having razor sharp teeth but now that I've tried it - I know they are for real. The grater seems to effortlessly shave through everything without tearing or shredding the food. And b/c it was so effortless, I could just hold the grater over my food and grate right onto it. I would highly recommend this grater and will definitely be looking to getting some of their other graters. Cuisipro well done!

Dalla Piazza Apple Slicer/Corer Review

(More customer reviews)We sell a wonderful American-made slicer at my family farm, Soons Orchards, but it does only 8 slices. This does 12, which makes a difference in chopping time for when we do applesauce, for example. (Our bakery is also using it.) I also plan to use it when we're busy in the fall for apple sampling. It's very heavy (which is good) and the raised handles are a nice touch. It is a sharp tool, of course, so keep it away from little hands.

I give my cats wet food every morning for breakfast and hated popping the tops of the cans, and so many cans of vegetables now come with pop tops. These little plastic thingies do the job so easily. I'm going to be buying more of these to give as little gifts.

(More customer reviews)As a veteran of dietary supplement powders (multivitamins, fiber, and mysterious green powders), this is the best shaker I've used to date! The tight-fitting lid stays firmly in place, even after months of use, unlike the cheap dribble shaker that came with the vitamin powder, and the domed top allows plenty of air space for optimal blending. My supplements dissolve faster and without the clumping I sometimes experienced with my old flat-topped 16 ounce shaker. I like the fact the container's see-thru and calibrated: ounces, cups, and ml. The plastic is lightly textured on the outside for a non-slip grip, and very smooth on the inside for optimal shaking and easy cleaning. The plastic is stable, so lacks that yucky plastic smell. In addition to supplement powders, this shaker, complete with pour top (make sure it's locked in place before shaking) would be great for smaller portions of salad dressings, where you don't want to drag out the blender.
In addition to a shaker, this container doubles as a covered drink container for the car, since the lid stays on tight, and the bottom is narrow enough to fit in all but the flimsiest cup holders. A friend takes his Tupperware shaker to the juicebar for carryout juices! The pour-top doubles as an opening for a straw, for kids or people who need to drink from a straw (like when I had a neck injury). A calibrated drink container can also be helpful for people trying to make sure they drink 8 glasses of water a day.
While the listed price seems like a lot to pay for a shaker, if it's like my other Tupperware containers, it'll be around for decades!

(More customer reviews)This set of cornholders definitely beats the old style in the shape of corn holders that I previously had. First, each pair fits into each other so you can safely put these away and also take care of fears of hygiene and rust. Second, they are are way bigger than the original corn holders so you get a real good grip. The only corn holders that give you a better grip would be OXO's but those sometimes with all the butter and BBQ sauce can have a slight rubber smell. These holders are hard plastic with steel prongs.
To make these holders more effective you will want to trim the ends of the corn's ear, but you would have to do that anyhow for the older versions so that' not too bad.
Overall, worth the money just for the easier storage and cleaning.

To a professional chef, no kitchen tool rivals a great set of knives. When learning my trade in Paris, France, I used only the finest Sabatier knives. Later in life, I was fortunate to make a Swiss Miss a Mrs. Typically frugal and practical... and from a family that has had the same Restaurant Bauernhof for centuries... so, when my prized Sabatiers were lost in transit, she replaced them with a more economical (stamped not forged) Swiss brand, R. H. Forschner by Victorinox.
Suddenly, this 70 year old retired chef cut through decades of knife prejudice... the sharpness, balance, thin blade and heft brought joy to my kitchen again... and for a fraction of what I would usually pay! It has been several years since my first Forschner and it is just as good as the one I just purchased.
Last fall we visited Oberlunkhofen, Switzerland, where my mother-in-law continues as chef of the family restaurant at 82 years of age and her 86 year old sister-in-law is the waitress. Her wooden handled knives were of excellent quality but could no longer pass the NSF rules. I purchased a set of H. R. Forschners for her at a Swiss wholesale restaurant supply house... at a price higher than we could have gotten them on Amazon.com! Not only is she a cutlery pro, but she values price and practicality even in gifts. Now she thinks kindly of me as she cheerfully slices through each day.

CDN Multi-Mount Oven Thermometer Review

(More customer reviews)I bought this based on the Cook's Illustrated review. The first thing I noticed is the hanging hook doesn't fit the heavy racks in our Viking oven. Fortunately the magnet mount works well and I stuck it on the back wall of the oven under the light. The third mounting method is a flip down wire stand. I haven't tried this but it seems like it will be fine for a flat surface like a cookie sheet or pizza stone.
Aside from mounting issues the thermometer seems functional. I'd prefer a bigger more readable model that I can read through the oven window.
